Cauliflower Fried Rice
2 green 1 red 1 orange
2 green container serving size.
The list of ingredients can be changed. I have seen many swaps for this recipes.
- Olive oil for sesame oil
- Liquid aminos for soy sauce

- Another great time saver is to buy the cauliflower rice pre-chopped. I have seen it at trader joes for $1.99.
- Adding more chicken is an option to depending on home much protein you would like per serving.
- add sriracha sauce to spice it up.
Directions:
- Chop head of cauliflower into florets and place in food processor. Pulse until it starts to resemble rice; set aside.
- Heat skillet with sesame oil and cook chopped chicken.
- Add garlic, peas and carrots and saute until tender. option add 1/2 cup water if using fresh veggies instead of frozen.
- Slide veggie mixture to one side of the pan and add in the beaten eggs, scrambling until cooked through and then incorporate with the veggies.
- Stir in cauliflower "rice" and pour the soy sauce over top, mixing well. Cook for an additional 3 to 4 minutes, until cauliflower is soft and tender.
- Top with green onions, serve and enjoy!
