Oatmeal Muffins

Yields: 12 servings.
Ingredients:
nonstick cooking spray
2 large eggs, lightly beaten
1 tsp. pure vanilla extract
2 large ripe bananas, mashed
1 Tbsp. raw honey
2.5 cups old-fashion rolled oats
1 Tbsp. ground cinnamon
1.5 tsp. baking powder
1.5 cups unsweetened almond milk
3/4 cup chopped nuts (ex. almonds, walnuts, pecans)
optional 1 Tbsp. Stevia
Directions:
- Preheat oven 350 degrees
- Prepare 12 muffin tin cups with cooking spray
- Combine eggs, vanilla extract, bananas, and honey in bowl and mix well, set aside.
- Combine oats, cinnamon, Stevia, and baking powder in bowl and mix well,
- Add oat mixture and wet mixture and mix well.
- Add almond milk; mix well.
- Divide oat mixture evenly to 12 muffin cups. (almost full)
- Top with nuts.
- Bake 26-30 minutes, check with toothpick (insert into the center and check if it comes out clean).
