Zucchini Noodle Spaghetti

Zucchini Noodles

Super Quick Recipes for a Healthy Dinner

Zucchini noodles are a great replacement for regular pasta. All you need to make them is a Vegetable Spiralizer.  This is a great way to sneak in more vegetables into you diet. 





Prep: 15 mins
Cook time: 15 mins
Total time: 30 mins 



INGREDIENTS
  • 6 zucchinis, cut into thin noodles with a vegetable slicer
  • 1 tablespoon extra virgin olive oil
  • 1 Jar of pasta sauce (or make your own) 
  • 1 lb Ground beef or Turkey 
  • 1 tsp. Parmesan cheese, for garnish if desired

INSTRUCTIONS
  1. Spiralize zucchini into noodles set aside 
  2. Add oil to a large saucepan.
  3. Brown meat then add any spices and pasta sauce (bring to slow boil).
  4. Add zucchini noodles to the sauce and cook for 1-2 minutes or until tender.
  5. Add Parmesan cheese (optional).
  6. Serve immediately.

Meal Plan for my Week















This is my weeks meal plan while following the 21-day fix diet plan. The plan is so simple. It is a clean eating and exercise program that delivers results fast. I have been using this program since December 2015 and have lost about 13 pounds, dropped a dress size and many inches off my waistline, arms, and legs. I also feel healthier and have more energy.

21-day FIX and Shakeology



Starting a new round of the 21-day Fix program next Saturday. I have seen such amazing results with this simple eating plan. The workouts are fun and are different every day of the week.


Shakeology is an added benefit to my fitness and clean eating routine. When I am in a hurry I can just add my Shakeology to my unused infant formula container and now I have it TO-GO!

Cauliflower Fried Rice Dinner

Cauliflower Fried Rice

2 green 1 red 1 orange  

2 green container serving size. 

The list of ingredients can be changed. I have seen many swaps for this recipes. 
  • Olive oil for sesame oil 
  • Liquid aminos for soy sauce

  • Another great time saver is to buy the cauliflower rice pre-chopped. I have seen it at trader joes for $1.99. 
  • Adding more chicken is an option to depending on home much protein you would like per serving. 
  • add sriracha sauce to spice it up.

Directions: 

  1. Chop head of cauliflower into florets and place in food processor. Pulse until it starts to resemble rice; set aside. 
  2. Heat skillet with sesame oil and cook chopped chicken. 
  3. Add garlic, peas and carrots and saute until tender. option add 1/2 cup water if using fresh veggies instead of frozen. 
  4. Slide veggie mixture to one side of the pan and add in the beaten eggs, scrambling until cooked through and then incorporate with the veggies. 
  5. Stir in cauliflower "rice" and pour the soy sauce over top, mixing well. Cook for an additional 3 to 4 minutes, until cauliflower is soft and tender. 
  6. Top with green onions, serve and enjoy! 

Breakfast muffins

Oatmeal Muffin

Oatmeal Muffins 

21-day Fix Approved 

Total time: 45 min
Prep time: 15
Cook Time: 30 min
Yields: 12 servings.

Ingredients: 

nonstick cooking spray
2 large eggs, lightly beaten
1 tsp. pure vanilla extract
2 large ripe bananas, mashed
1 Tbsp. raw honey
2.5 cups old-fashion rolled oats
1 Tbsp. ground cinnamon
1.5 tsp. baking powder
1.5 cups unsweetened almond milk
3/4 cup chopped nuts (ex. almonds, walnuts, pecans)
optional 1 Tbsp. Stevia

Directions: 

  1. Preheat oven 350 degrees
  2. Prepare 12 muffin tin cups with cooking spray
  3. Combine eggs, vanilla extract, bananas, and honey in bowl and mix well, set aside.
  4. Combine oats, cinnamon, Stevia, and baking powder in bowl and mix well,
  5. Add oat mixture and wet mixture and mix well.
  6. Add almond milk; mix well. 
  7. Divide oat mixture evenly to 12 muffin cups. (almost full) 
  8. Top with nuts.
  9. Bake 26-30 minutes, check with toothpick (insert into the center and check if it comes out clean). 

21-day Fix 1/2 yellow 1/2 blue (per serving one muffin)
