Stuffed Bell peppers

Stuffed Bell Peppers

This is a go-to recipe in my house. I really like bell peppers and so does the rest of family. I also like to sneak in a few more veggies by adding shredded carrots (or whatever extra veggies you have) into the beef mixture. 
Ingredients: 
  • 4 large bell peppers (any color) 
  • 1 lb lean (at least 80%) ground beef 
  • 2 tablespoons chopped onion 
  • 2 cup shredded carrots 
  • 2 clove garlic, finely chopped
  • 1 blue container shredded mozzarella cheese for each bell pepper. 
  • Italian seasoning to taste 

 Directions:

  • Pre-heat oven to 350 degrees
  • Add meat, onions, seasoning, and garlic to large pan and cook thoroughly. 
  • Cook seasoned meat, and drain. 
  • Add shredded carrots, stir for about 1-2 minutes.


  • Cut bell peppers length wise or cut off tops. 
  • Stuff the peppers with the meat mixtures. 
  • Top with blue container of cheese.
  • Bake for about 20 mins. 
  • Serve HOT! Enjoy!
