Stuffed Bell Peppers
This is a go-to recipe in my house. I really like bell peppers and so does the rest of family. I also like to sneak in a few more veggies by adding shredded carrots (or whatever extra veggies you have) into the beef mixture.
Ingredients:
- 4 large bell peppers (any color)
- 1 lb lean (at least 80%) ground beef
- 2 tablespoons chopped onion
- 2 cup shredded carrots
- 2 clove garlic, finely chopped
- 1 blue container shredded mozzarella cheese for each bell pepper.
- Italian seasoning to taste
Directions:
- Pre-heat oven to 350 degrees
- Add meat, onions, seasoning, and garlic to large pan and cook thoroughly.
- Cook seasoned meat, and drain.
- Add shredded carrots, stir for about 1-2 minutes.
- Cut bell peppers length wise or cut off tops.
- Stuff the peppers with the meat mixtures.
- Top with blue container of cheese.
- Bake for about 20 mins.
- Serve HOT! Enjoy!
