21-day Fix Meatballs

Turkey, Beef, Veggie Meatballs

  • 2 lbs of lean ground turkey
  • 2 lbs Ground beef 
  • 1 teaspoon of Himalayan Salt (or sea salt)
  • 1 teaspoon of ground mustard
  • 1 teaspoon of paprika (smoked paprika if you have it)
  • 2 large egg, lightly beaten
  • 1 cup whole grain quick cooking oats (may need to add more oats if mixture is too wet) or whole grain panko can be used. 
  • 4 cloves of garlic, minced
  • 2 tablespoon of dried parsley
  • 3-4 Steamed and pureed Zucchini 
  1. Preheat oven to 400
  2. Cover a large pan with parchment paper, set aside.
  3. In large bowl, combine all ingredients by hand and mix well.
  4. Roll into 1-inch balls. Place on baking sheet.
  5. Bake for 15-20 minutes, until cooked through.
